Recipe by Jean-Pierre, a Saint Jean de Monts resident
Ingredients:
- Mogette beans (semi-dry beans)
- Salted butter
- A clove of garlic
- Bread
- Spirit vinegar (optional)
- Salt
- Pepper
Method
- Soak the mogette beans overnight
- Rinse them the next day and cook them in a pan filled with water, 1.5 time the volume of the beans
- Season with salt and pepper
- Stop cooking when the mogette beans become soft but aren’t a paste
- Grill the toast bread
- Rub a clove of garlic on each toast and spread with salted butter
- Cover with mogette beans
- Drizzle with a dash of spirit vinegar as desired
