La Gralaïe – Mogettes on buttered toast

Recipe by Jean-Pierre, a Saint Jean de Monts resident


  • Mogette beans (semi-dry beans)
  • Salted butter
  • A clove of garlic
  • Bread
  • Spirit vinegar (optional)
  • Salt
  • Pepper


  • Soak the mogette beans overnight
  • Rinse them the next day and cook them in a pan filled with water, 1.5 time the volume of the beans
  • Season with salt and pepper
  • Stop cooking when the mogette beans become soft but aren’t a paste
  • Grill the toast bread
  • Rub a clove of garlic on each toast and spread with salted butter
  • Cover with mogette beans
  • Drizzle with a dash of spirit vinegar as desired
