About us

Thierry has been working as a salt producer since 1998. So for the last few years he's been delighted to welcome you to share his passion for life in the heart of nature.

He invites you into a natural, unspoilt environment… His marsh is called “Les Valencières”. He will be delighted to show you around his business and his production of coarse salt, natural and flavoured fleur de sel, various assortments and salicorne.
You can also find some of his products in the Tourist Office shops, or direct from the farmers’ market in Notre Dame de Monts, on Tuesday mornings in July and August.
From April to September, Thierry invites you on free tours (for more information, contact the Tourist Office), even when the weather is bad. Thierry adapts to the conditions and to you, depending on your age and wishes.

During your visit, you’ll not only learn about his business, but Thierry will also be keen to help you understand the history of Bouin’s culture and how it has evolved. It’s a great opportunity to discover Bouin, with its five harbours, its fisheries, its oyster huts and its market town, where the walls of the old buildings still speak of the flourishing days of the salt trade. Up until the middle of the 19th century, up to 600 salt marshes were in operation!
Thierry was lucky enough to meet one of the last salt-marsh workers in Bouin, who taught him everything he needed to know and passed on his know-how, that of his ancestors, as he practises his trade as it was done 1,000 years ago!
