The Chef Eddy Zefner offers an authentic recipe for "Gralaie Mogettes" (a type of beans on toast). It was during a meeting with a local maraichin that he was shown and learned the secrets of this recipe.
You can accompany your "Gralaie" with pieces of duck from Challans and salicorne (a type of pickle).
A simple yet savoury recipe from Chef Eddy Zefner. He learned all the secrets for its preparation from a local inhabitant - a take on beans on toast which is 100% local.
One of the chef’s specialities - a seafood sauerkraut which is made entirely in-house. Treat yourself to cabbage with salmon, haddock, cod, clams and langoustines.
